A simple, delicious dinner recipe made with potatoes, onions, peppers, and avocado.
- Ingredients:
- 2 potatoes, chopped into small cubes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 avocado, chopped
- 2 eggs, beaten
- Salt and pepper to taste
- Instructions:
- Heat a large skillet over medium heat.
- Add the potatoes and onion to the skillet and season with salt and pepper. Cook, stirring occasionally, until the potatoes are softened, about 10 minutes.
- Add the bell pepper and cook for an additional 5 minutes.
- Stir in the avocado and eggs and cook until the eggs are cooked through, about 3 minutes.
- Serve warm.

- 1 cup uncooked white rice
- 2 cups water
- 1 15-ounce can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Instructions:
- In a medium saucepan, bring the rice and water to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the beans, cumin, and chili powder and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Serve warm.

- Ingredients:
- 1 avocado, peeled and mashed
- 1/4 cup finely chopped onion
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- Salt and pepper to taste
- Tortilla chips, for serving
- Instructions:
- In a medium bowl avocado with a fork.
- Stir in the onion, cilantro, jalapeno, lime juice, and salt and pepper to taste.
- Serve the guacamole with tortilla chips.
