Vegetarian Stuffed Peppers

Ingredients:

  • 3 bell peppers
  • 1 cup cooked quinoa
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced red onion
  • 1/4 cup diced jalapeno peppers
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish with cooking spray.
  2. Cut the bell peppers in half lengthwise. Remove the seeds and membranes, then set aside.
  3. In a large bowl, combine the quinoa, black beans, corn, onion, jalapeno peppers, salsa, cheese, olive oil, chili powder, salt, and pepper. Mix until well combined.
  4. Stuff each pepper half with the quinoa mixture. Arrange the peppers in the prepared baking dish.
  5. Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
  6. Serve warm and enjoy!
