Vegetarian Stuffed Peppers
Ingredients:
- 3 bell peppers
- 1 cup cooked quinoa
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn
- 1/2 cup diced red onion
- 1/4 cup diced jalapeno peppers
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish with cooking spray.
- Cut the bell peppers in half lengthwise. Remove the seeds and membranes, then set aside.
- In a large bowl, combine the quinoa, black beans, corn, onion, jalapeno peppers, salsa, cheese, olive oil, chili powder, salt, and pepper. Mix until well combined.
- Stuff each pepper half with the quinoa mixture. Arrange the peppers in the prepared baking dish.
- Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
- Serve warm and enjoy!
