#Meat-Free Chinese Recipes
Vegetable Lo Mein
- 1 tablespoon sesame oil
- 1/2 cup diced onion
- 1/2 cup shredded carrots
- 1/2 cup sliced mushrooms
- 1/2 cup diced bell pepper or snow peas
- 1/2 teaspoon minced garlic
- 3 tablespoons low-sodium soy sauce
- 1/4 teaspoon freshly ground black pepper
- 4 ounces uncooked lo mein noodles
- 1/4 cup chopped green onions
Instructions
- Heat the sesame oil in a large skillet over medium heat. Add the onion, carrots, mushrooms, bell pepper, and garlic. Cook, stirring often, until the vegetables are tender, 3 to 5 minutes.
- Stir in the soy sauce and pepper. Add the noodles and cook, stirring often, until the noodles are tender, about 4 minutes.
- Stir in the green onions and cook for 1 minute more.
- Serve warm.
Vegetable Fried Rice
- 3 tablespoons vegetable oil, divided
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 ribs celery, diced
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots
- 3 cups cooked white rice
- 3 tablespoons low-sodium soy sauce
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the garlic, onion, carrots, celery, and bell pepper. Cook, stirring often, until the vegetables are tender, 4 to 5 minutes.
- Add the peas and carrots and cook for 2 minutes more.
- Stir in the remaining 1 tablespoon of oil, the cooked rice, soy sauce, and pepper. Cook, stirring often, until the rice is heated through, 3 to 5 minutes.
- Stir in the cilantro and cook for 1 minute more.
- Serve warm.
